Meal planning when traveling is hard enough but when you go to a foreign country it becomes even tougher. Eating food that one is not used to can be really tough on your digestive system so we had to be aware of that at all times. Our meals were all served at the on an outdoor patio at the home of Roger and Norma. Norma has an amazing kitchen....an industrial type kitchen. She has a few women that work in the kitchen and they do amazing things with food!! Norma also has a sign posted at the beginning of the food line.... "Tonight's Dinner Choices 1. Take It 2. Leave It"
We had 3 meals each day. Breakfast was served early every morning. Fresh coffee (a must for me!!) was ready when we arrived. We were served an amazing homemade granola each morning with milk or yogurt options. The granola was very different than what we are used to in the US but it was so delicious. We also had fresh (and when I say fresh I mean right off of a tree) mangoes, bananas and papayas. It was amazing to me how much different they tasted and how BIG they were. We also had eggs, caramel rolls, fresh baked bread, sausage and bacon. I chose "TAKE IT"

Our next meal was served at the end of the school day. Every day Norma feeds the teachers at Sonlight lunch after the students are done for the day. That was at 2PM each day for us. This is the BIG meal of the day....pot roast, spaghetti, rice and beans. Something different each day. There was also a dessert choice each day.Again, fresh coffee and iced tea were served. It was during one of these meals that we were introduced to a Haitian type of meal and I got to try Pikliz which is a Haitian coleslaw with A LOT of kick!! We also had fried plantains several times and they were delicious too. I chose "TAKE IT"

In the evening after our afternoon outings, we gathered on the patio for a lite dinner around 6PM. Some days that meant several great dessert choices. Some days, we had a dish made from leftovers and other days we had chunky peanut butter and homemade apple butter. Again, I chose "TAKE IT"

After a day or 2, all anxiety regarding what we would be eating for the week were completely gone. I stopped thinking about the carbs and enjoyed every bite. I had packed a jar of peanut butter....just in case. I gave that away in the early part of the week with no more concern that I would need it.
Norma and her team went above and beyond feeding us. I will not comment how that translated on the scale when I got home. Norma....if you read this....THANK YOU!!!!
